5 chicken drumsticks

10 cloves garlic

4 shallots

5 candlenuts, roasted

½ tbsp coriander seeds, roasted

¼ thumb-size ginger

¼ thumb-size turmeric, charred
-
½ tsp roasted shrimp paste (about ½ tsp when crushed)

100 g water

½ tbsp sugar

1 tsp garlic powder

¾ tsp salt

½ tsp chicken stock powder

½ tsp pepper

35 g cornstarch
-
35 g tapioca flour
-
Olive oil spray, as needed

Directions
Blend until smooth: garlic, shallots, roasted candlenuts, roasted coriander seeds, ginger, charred turmeric, and roasted shrimp paste. Add a little of the 100 g water to help the blending process.
In the Ninja CRISPi glass pot, add the chicken and pour in the spice paste. Add the seasonings: sugar, salt, garlic powder, chicken stock powder, and pepper. Mix well until the chicken is evenly coated.
Add cornstarch and tapioca flour. Mix until the flour combines with the spices and forms a coating that sticks to the chicken (not a runny batter).
Let it rest for 10–15 minutes.
Arrange the chicken in the pot without stacking. Lightly spray the surface with olive oil. Close the pod and press the Air Fry button. Cook for about 15 minutes on each side, until the surface is golden and crispy and the chicken is cooked through.
