Carrot Gelato with Ninja CREAMi Ice Cream Maker

Ingredients

3 large egg yolks

1/2 tsp. ground cinnamon
-
1/3 C. coconut sugar
-
1/4 tsp. ground nutmeg
-
1 tbsp. brown rice syrup
-
1/4 tsp. ground ginger
-
1/2 C. heavy cream
-
1/4 tsp. ground cloves
-
1 C. unsweetened almond milk
-
3/4 tsp. vanilla extract
-
1/2 C. carrot puree

Directions
In a small saucepan, add the egg yolks, coconut sugar and brown rice syrup and beat until well combined.
Add the heavy cream, almond milk, carrot puree and spices and beat until well combined.
Place the saucepan over medium heat and cook for about 2-3 minutes, stirring continuously.
Remove from the heat and stir in the vanilla extract.
Through a fine-mesh strainer, strain the mixture into an empty Ninja CREAMi pint container.
Place the container into an ice bath to cool.
After cooling, cover the container with the storage lid and freeze for 24 hours.
After 24 hours, remove the lid from container and arrange into the outer bowl of Ninja CREAMi.
Install the "Creamerizer Paddle" onto the lid of outer bowl.
Then rotate the lid clockwise to lock.
Press "Power" button to turn on the unit.
Then press "GELATO" button.
When the program is completed, turn the outer bowl and release it from the machine.
Transfer the gelato into serving bowls and serve immediately.
